Scope and Content

This collection contains recipe cards featuring eggs as the main ingredient and educational pamphlets regarding the production, nutritional value, and preparation of eggs. Some of the topics covered in these pamphlets are: microwave preparation, egg facts and recipes for children and senior citizens, breakfast and brunch, ethnic, quick and easy, popular egg basics, questions about eggs, nutrition, economy, food safety, entertaining, and dieting. The collection contains approximately 100 different items.

Biographical Information

The American Egg Board is an organization that works with egg producers to successfully market eggs to the public. This nationally funded organization works to increase the public demand for eggs and egg products. Although the board is appointed by the U.S. Secretary of Agriculture, the board is made up of 18 representatives, as well as 18 alternates, from all areas of the country.
